NotesTips: as with all yeast doughs, make sure not to over (or under) flour the dough! I've given tips in the recipe (and here's a simple tutorial on yeast). The step-by-step pictures below the recipe are also a great visual. Tutorial: to get those perfectly shaped round balls of dough, here's a little video tutorial (minute marker 2:20). Whole Wheat Version: if you are looking for a whole wheat version of these rolls, here's the perfect fluffy whole wheat french bread roll recipe. You can also sub part of the all-purpose flour in the recipe below with whole wheat flour, if desired. Freezable Option: I almost always make a double or triple batch of these rolls. Once they are baked and cooled, I place them in a zipper-lock freezer bag and put them in the freezer. I either take them out a few hours before I need them or I take them out frozen and microwave them for about 2-3 minutes on 70% power. |

INSTRUCTIONS
- Preheat oven to 375 degrees. Add butter to a rimmed baking sheet and place in oven to melt, being careful not to burn butter. Remove when melted.
- In the bowl of your standard mixer, combine yeast, water & sugar. Set aside and let sit 5-10 minutes or until yeast is foamy and dissolved.
- Gradually add salt and flour to the yeast, mixing with your hook attachment until well combined. Knead dough a few times then divide dough into 15 balls. (If dough is too sticky, you can spray your hands with nonstick spray). Roll dough into sticks and place on buttered baking sheet. Roll in butter.* Top with garlic salt and Parmesan or Garlic Parmesan Seasoning (Note that you will NOT use all of the seasoning*). Let the breadsticks rise for 15-20 minutes. Bake for 15 -20 minutes or until golden.
RECIPE NOTES
*There will be remaining butter on the baking sheet after rolling breadsticks in butter.
**The extra seasoning is delicious in pasta or you can combine 1 1/2 tablespoons of seasoning with 1/2 cup of softened butter and spread on French bread and bake at 375 degrees in foil or until butter is melted.
