MEDITERRANIAN BLACK BEAN SALAD-Sara


  • 3 1/2 c. cooked, drained black beans (or 3 15oz. cans)
  • 1/2 c. finely diced red onion (about 1/2 a med. onion)
  • 1 large tomato, finely diced
  • 1 med. cucumber, finely diced
  • 1/2 c. chopped fresh parsley
  • 2 T. FRESH mint leaves
    • dressing:
    • 1/4 c. lemon juice
    • 1/4 c. extra virgin olive oil
    • 1 tsp. cumin
    • 1/2 t. salt
    • 1/4 t. pepper
  • chill; good served as salad, or with steamed rice for a main course
