- 3 1/2 c. cooked, drained black beans (or 3 15oz. cans)
- 1/2 c. finely diced red onion (about 1/2 a med. onion)
- 1 large tomato, finely diced
- 1 med. cucumber, finely diced
- 1/2 c. chopped fresh parsley
- 2 T. FRESH mint leaves
- dressing:
- 1/4 c. lemon juice
- 1/4 c. extra virgin olive oil
- 1 tsp. cumin
- 1/2 t. salt
- 1/4 t. pepper
- chill; good served as salad, or with steamed rice for a main course
